SHRIMP
12lgShrimp, peeled (except tails, if desired), deveined, butterflied, *see note below
1tsOlive oil (or canola...your preference)
1/4cBread crumbs (up to 1/3 cup)
2tbUnsalted butter, in all (+ 2 tsp), room temp is best
2/3cOnions, chopped
1/3cBell pepper (I used red..use what ya like), chopped
1/3cCelery, chopped
1/3cCarrot, grated
2Serrano chiles (or to taste), chopped
1tsFresh garlic (less if not a garlic fan), mashed/minced
1Fresh hot Italian sausage, cooked, *see note below
1cSeafood stock (from SAVED shrimp shells)
Vegetable oil/cooking spray/whatever

1cHeavy cream
1/2cTomato puree OR
1/2cRed pepper coulis (if you're the industrious sort...)
